Our Synergie has two sun roofs, neither of which are working since we bought it.
The simple pone over the driver just needs the handle that clamps it shut apparently, I need to have a look at that more closely.
The larger sliding one over the rear passengers I dont know about.
Is there a common problem and well known solution to this?

I've never owned one with sunroofs, but it seems to be a common problem. If they suffer the same problems as did the Citroen XM, it's quite a job to fix, but I'm only guessing

Well I dont really know where to start, but I am thinking to try to get a working one as a complete roof section and take it to bits so I can understand it and how to keep it maintained, then disassemble mine and replace what I need to.

On the XM, the water would sit in the roof section and not drain away due to the angle/slope of the roof. Then the wire drive mechanism would rust up. I suspect these are the same.
A replacement roof will probably be the solution, if you can find one.

If you manage to find one, simply remove the metal casing that covers the drive mechanism and give it a good lube with oil n grease, shopuld then outlast the car.
Again, on the xm these were quite easy to remove and not too bad to refit, but the BX was a pain and some of the headlining was glued to the sliding roof part.
