I'm getting a knocking metallic sound from the rear when I have a passenger sitting in the back on same side as the exhaust pipe

I believe it to be the exhaust hitting the rear spring when going around corners because the exhaust had moved over on the rubber mounting.

I've moved it back to a central position but it was very easy to do to that and I've not sure if this is because the rubber is worn out.

Should it be that easy to move the exhaust on the rubber or do I need a new rubber mount?

The rubber mounting should hold it quite secure. If its easy to move the mounting (or the exhaust) chances are its worn out, split or broken.

Easy enough to change and quite cheap from e-bay

There are a couple of mounts, the one which corrodes is attached to the rear nearside wheel arch.

Jack up the rear nearside so the wheel drops and you should see it. Look for splitting of the rubber and wearing of the metal strap.
