We have fitted customised Dog Gates (Lockable) to the rear compartment of our 2011 Partner Tepee but cannot Lock the main doors with the Tail Gate open and therefore cannot leave the Dogs in the Car with the Tailgate open.
Any advise as to how we can override the Sensor in the TailGate please?

I'm not familiar with the Partner tailgate but this trick works on a lot of car doors and boots.

Does your car have a D shaped bracket or metal post in the boot floor that the lock in the opening hatch locks onto?

Examine the lock in your opening hatch. There is usually a V shaped slot in the lock that the post or bracket on the bodyshell slots into.

Use a small metal bar (phillips screwdriver usually works) and press this into the V slot in the open hatch lock until the lock engages.
Sometimes you may have to press twice and you may hear two clicks as the lock engages.

Slide the screwdriver out of the lock and press lock on your remote.

While the hatch/door is in this condition it won't close properly.
Press unlock on your fob then lift the hatch/door handle to release the lock before closing it.

Good luck.

There seems to be contact switches built in to the tailgate assembly, these will be telling the locking system the tailgate is open & prevent the car from locking.

The electrical contact / switch may be built into the lock but we are tricking the car into thinking the tailgate is now closed because the moving parts in the tailgate lock are now in the closed position and not in the tail gate open position.

Won't know until someone tries it on the Teepee but it works on many other cars.

For a solution be might be able to disconnect the tailgate lock sensor/switch connector and then short the wiring loom connector so it appears to be permanently closed and that should allow you to lock the car with the back door open. I can't offer any more advice without seeing what's there.
