I am wondering. Considering that the infotainment system is open source.

How come i can't find any alternatives for the software package. Where people have made changes. Like make AA start automatically, or make AA fill the entire screen or other interesting stuff.

Also, is there a tool to change settings through OBD2 port. Like make the car automatically lock when key is too far away, and stuff like that?

It isn't totally open source, but it uses open source software, which is quite different. There is plenty of proprietary software in the infotainment system, such as drivers.
You can't build a functional system only with the software on that page.

And the installation procedure needs the firmware to be digitally signed with the PSA/Stellantis key.

There's the official and proprietary DiagBox software with the proprietary Actia XS Evo/Lexia3 VCI connected to the OBD port. But you can't change settings (telecode) if the required hardware isn't present. And there are different hardware for the proximity keyless system.
