Don't proclaim to be an expert but I had similar prob on my 2005 1.6 HDI 307 - auto mechanic said it was an ECU issue - he did a reset and haven't had an issue since!

Aircon works briefly and then cuts out (307 cc 2005)
Hi all,
The aircon cuts out after working for about 1 min. Doing it on hot days only (as far as I can tell)
I think the problem might be the cabin temp sensor but all the research I've done seems to have the sensor in different parts of the car!
Where is it located on a 2005 model of this car? Also, which part do I need to replace it, google hasn't been that clear as to which one I need.
