Hiya does anyone know if you can fit a 5 dial dash to a 4 dial car? I've seen a nice white dial dash for cheap and was wondering if it's a straight swap or if anything'll need reprogramming to match

Short answer: yes.

Long answer: you will need PP2k/Diagbox to tell the car to send the oil temperature to the instrument cluster. AFAIK every car left the factory with an oil temperature sensor (certainly every 406 did). IIRC there are three places that it has to be enabled -- work methodically through all screens!

The mileage on the car is stored both in the instrument cluster and in the BSI and if you chagee either then on powering up both of them will synchronuse the mileage to the highest of what is stored in either of them. Therefore to preserve your mileage you must get a 5-clock cluster from a car that has a lower mileage than yours.

I prefer the black clocks to the white ones because the white ones are difficult to see at twilight/dusk because they light up orange and orange on black is easy to see but orange on white is not.

Just confirming that this will work just fine. I just installed a 5 dial cluster with white faces into my 2005 407 2.0 HDI with base trim level (originally had a 4 dial cluster with black faces).
You will need to change the BSI configuration with Diagbox in order to get the oil temperature guage to work - set the “separate oil temp” to present and then check that the “source of oil temp data” is set to “engine relay unit”.
