Hi

My 207 1.6vti automatic has started to stall randomly when slowing down (so foot on the break gradually slowing). Doesn't do it all the time just randomly

Wiring harness for engine has been replaced due to damage from water ingress along with the ECU.

when slowing the revs often drop to near 500/600 and then bounce back up, but other times it just can't seem to save itself and stalls. Starts again straight away. Only error code is for a piloted thermostat control fault (I presume this is what's making the air con now blow warm) which is code P0599.

Car is a 1.6 VTI automatic model

Most common cause for your type of issue is unmetered air getting into the intake system so check it for leaks.
However, there are multiple other issues which can cause it as well like EGR system not functioning properly, MAF faulty/dirty, etc so you really need to get it live scanned with PP2000/Diagbox and pay attention to data from expected/actual airflow, fuel pressures, injector corrections etc.
