Default Temperature gauge

Hi I have had my temperature sensor replaced twice already now my car has started doing something funny. The temperature gauge is going up and down when I drive to the point it's in the red and the engine stop light is coming on for a few seconds then going off and the gauge goes down again. Now this is worse on the Motorway which is strange. If I have the hot air on full blast it stops it from going into the red but it still moves up and down. Oo I've got a 2008 207 1.4 sports. Does anyone have any idea what could be causing this?

Perhaps the gauge is telling the truth, and you have a defective thermostat?

Mine was doing this and I was advised to get the fault codes cleared using peugeot planet. This clears from the bsi aswell as ecu. Have you got any fault codes?
This worked for me but also at the same time I sort of pushed the wires in that are on top of the connector that goes into the sensor. So basically make sure the sensor and connector is secured.
