Default 207 GTI overheating problem.

Yesterday my car developed a problem. When starting the car from cold the engine temperature shot straight up to the max and the engine temperature red light came on. Also got a message on the display and red stop light luminated. I plugged in my diagnostics to check coolant temperature. On the 5 minutes drive home the coolant was rising as normal. Went up to 60 degrees. However intermittently the temperature would drop to around minus 2 or 3. On dash the needle still displayed max. Car coolant is just below max. Any ideas? Thanks
