Default 207 gt hdi 1.6 hdi. Temp gauge drops when idling ( new thermostat fitted)

Hi all

Could anybody tell me why my temp gauge drops when the engine is idling. The car is a 207 gt hdi 1.6 hdi 110, 57 plate. Ive fitted new thermostat housing the complete one with the thermostat and sensor complete. The heater is blowing hot and the top rad hose it hot. Could anybody tell me why this is thanks

I also would like to add, the temp stays in one place between 80 and 90 when the heater is turned off
