Default 207 1.4 8v Temperature Problem

My 207 Verve 1.4 8v has an issue with the temperature. It will eventually climb off the stop to 90 degrees after about 30 mins driving, but it will soon go back down again and never stays at 90.

I've tried a new coolant sensor. Could it be a thermostat issue or something else?

Thermostat is likely based on your description.
