Sorry to be a pain but how do you change the bulbs behind the fan and heating controls????

You have to do a bit of soldering, those should be all led's iirc. See here there is a really nice guide for 307, and yours should be similar enough im thinking: 307 Climate Control LEDs

Shouldn't be soldered, just push in and turn 1/4 turn I think
Should be able to buy them from any motor factors, don't think they are anything special .... unless Peugeot have changed drastically from the 306 to the 207

My bad then, i was under impression that since 06 generation they started using leds in dash and switches.

I haven't had one from 06 onwards apart, so maybe you're right... I have only ever had older ones apart and they were normal little bulbs like the ones on the link to the 307 ones.
