Does anyone know whether electronic modules can be interchanged between 1007's - or are they all coded to the VIN by some mysterious dealer-only machine ?
Basically - if I get a module from a scrapyard will it work in another car ?

No it will need coding as the key has a chip in it , if you split to change remote battery inside there is a small chip glued to the plastic, unless you can get the remote chip on oner too the it's as easy as to put in and turn key on there is a section in manual to show how to recalibrate it , take note I say recalibrate and not reprogram as some think.

Depends what module you are after. At any rate, register at peugeot service box, find your car, find the module, it will be stated if it needs to be configured or coded to vin in comments under it
